Avocado Egg Salad – Recipe

I recently found a recipe for egg salad made with avocado instead of mayonnaise and passed it on to the other Girls because I thought it sounded good!  Since then, I’ve seen similar variations everywhere online!  It must be the new ‘it’ meal.  :)

 

I actually made this for the first time last week, and it is delicious!  You could season this endless ways, but I didn’t have a ton of ingredients on hand.  I just used this basic recipe…

 

Avocado Egg Salad

Ingredients
  • 1 hard-boiled egg
  • 1/4 to 1/2 ripe avocado
  • sea salt
Directions
  1. Mash avocado with a fork. Dice egg with your egg slicer and add it to the avocado. Sprinkle in a little sea salt, gently mix, and voila! Avocado egg salad!

 

I spread it on some sprouted grain Ezekiel bread, added a little spinach and sliced tomato, and lunch was ready!

This is so yummy.  You can add anything you’d typically add to regular egg salad… chopped celery, fresh herbs, spices, mustard, etc.  Mmmm… now I’m wanting to make it again just to try some variations.  :)
