Red Bean Chili – Recipe

This is our family’s go-to chili recipe.  It is delicious, and I know exactly what’s in it!


Red Bean Chili


Red Bean Chili
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 lb. grass-fed beef
  • 2 Tbsp chili powder
  • 2 tsp cumin
  • 1 tsp coriander
  • ½ tsp sea salt
  • ¼ tsp pepper
  • couple dashes oregano
  • dash cayenne pepper
  • 1 can kidney beans, rinsed
  • 1 (14oz) can diced tomatoes (I like to use Muir Glen)
  • noodles or spaghetti squash (to serve chili over)
  • organic shredded cheese, if desired
  1. Heat oil on medium. Saute onions 3-5 minutes. Add garlic for 1 more minute.
  2. Add beef and heat until cooked through.
  3. Add seasonings, kidney beans, and tomatoes. Heat until cooked through. If you have time, you can simmer this for up to an hour, adding water as necessary.
  4. Serve over noodles or spaghetti squash, and top with cheese if desired!

My kids request this on a weekly basis, and we re-heat the leftovers for lunch!
