I came across this recipe for Vanilla Avocado Banana Ice Cream over at Averie Cooks and decided to make it after the author said something like, “Is this Ben and Jerry’s? No. It’s BETTER.” Well this I had to try!
OH. Mygoodness. This is SO GOOD you honestly can’t imagine. You HAVE to try it. It is seriously amazing. I’ve had several people try it, and the consensus is the same… this is so delicious! There is something about the creaminess of the avocado and the yumminess of the vanilla… Mmmmmm! Here is my adaptation of the recipe…
- 1 ripe banana, sliced and frozen
- 1 ripe avocado, chilled
- ½ cup of milk (regular, coconut, almond, etc.)
- 1 tsp vanilla
- Sweetener as desired (stevia, sugar, raw honey, etc.)
- Blend all the ingredients in your Vitamix or blender and enjoy!
If your banana is frozen and your avocado is cold, this will whip up to the consistency of a very cold mousse/slightly soft ice cream. You can put it in the freezer to firm up just a bit, or you can add some ice cubes. Personally, I don’t like diluting this with ice. I either enjoy it freshly mixed or after being in the freezer a bit. :) The original recipe calls for 1/2 cup of sugar. My suggestion is to make it without any sweetener, and then add some to your desired sweetness. Note: If you add the entire 1/2 cup, it WILL taste better than Ben and Jerry’s! But you can totally get away with far less sugar. :)
A batch of this doesn’t last very long in my house. Last time I made this, my little girl was digging her spoon in the Vitamix before I could even put it in a dish!
Also, you can freeze the leftovers. In case you are wondering, it doesn’t turn brown in the freezer! Simply let it sit out for about 5 minutes when you are ready to serve it.
