Veggie Sandwich – Recipe

Lately I’ve been in a lunch rut… but then I stumbled upon this post from Jamie at Real Food Love and decided to make her veggie sandwich for lunch!  Yumm-o!  It’s been my new favorite lunch!  There is something inherently satisfying about a sandwich rather than making salads all the time.  But really, this is like a salad between 2 slices of bread.  :)


Veggie Sandwich


Here’s how I’ve been making it…

Veggie Sandwich
  • 2 slices sprouted grain bread (I use Ezekiel bread and can find it in the freezer section)
  • ½ avocado
  • sliced tomato
  • spinach or other lettuce (I sometimes use an herb blend with fresh dill that is delicious!)
  • sliced cucumber
  • sliced pepper
  • sea salt
  • mustard (I like dijon)
  1. Coat one slice of bread with mustard. Mash the avocado and spread it on the other slice. Fill the sandwich with all the other veggies, then sprinkle both halves with a little sea salt. put the slices together, cut, and enjoy!!


This can be a little messy, but the fresh veggies with a little salt are so good.  Just bring plenty of napkins to your table!
